Viscous sweeteners, such as refiner’s syrups, honey and rice syrups, and molasses, are used to improve the quality of everything from the taste and color to the overall mouthfeel of snack bars, cereals, cookies, and other baked goods. They also provide the nutritional value and the general positive consumer perception of the products that use them as ingredients.

From a processing standpoint, viscous sweeteners can be easily incorporated into formulations and provide a smooth, homogenous texture in comparison to granulated sweeteners.

Molasses and refiner’s syrups are used a lot in bakery to give the characteristic color, flavor, and texture to many baked products such as cookies. They are also used to improve the color of breakfast cereals while also improving cost efficiencies by synergistically boosting flavors like honey or cinnamon.

Rice syrups or tapioca syrups are commonly used in cereal bars and granola, where their high viscosity binds together the ingredients into a bar while complementing the nut and grain flavor profiles.

Additionally, our proprietary “co-crystallized” cane sugar offerings include free-flowing granulated and powdered sugars made with brown sugar, honey, and molasses. These quick-dissolving crystals can be very useful for operations where liquid handling and storage is difficult, or in processes like yogurt production where the integration of viscous liquids is problematic.

Co-crystallized sugars are also a great option for formulators who want the flavors of these viscous syrups but perhaps have a product not suited to liquids—such as powdered bakery mixes or dry seasonings.
